Ingredients (serves four):

  • 15 ml (1 tbsp) olive oil
  • 1 garlic clove, thinly sliced
  • 2.5 ml (½ tsp) crushed red chili flakes
  • 500 ml (2 cups) roasted and mashed Linton’s pumpkin
  • 250 ml (1 cup) Sargent's 35% cream
  • 454 g (1 lb) dried pasta
  • 125 ml (½ cup) finely grated Pecorino cheese
  • Salt (to taste)
  • Freshly cracked black pepper, crispy onions and chopped fresh parsley (for serving)

Instructions:

  1. Bring a large pot of generously salted water to a boil. Cook the pasta until al dente, according to package directions. Reserve at least 250 ml (1 cup) of the pasta cooking water before draining.
  2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the garlic and chili flakes, and cook for 2 to 4 minutes, stirring frequently until fragrant and the garlic is lightly golden.
  3. Add the roasted pumpkin and cream. Stir to combine and cook for 5 to 8 minutes, or until the pumpkin has formed a smooth sauce and the cream has slightly reduced.
  4. Add the cooked pasta to the skillet along with 125 ml (½ cup) of the reserved pasta cooking water. Toss until the pasta is evenly coated. Stir in the Pecorino cheese, adding additional pasta cooking water as needed to achieve a silky consistency. Season to taste with salt.
  5. Divide the pasta among four bowls and finish with freshly cracked black pepper, crispy onions and chopped fresh parsley. Serve immediately.
