Page’s Platefuls: Potato and Corn Breakfast Hash Recipe

You’ve had breakfast potatoes, but we bet you’ve never had them like this before! There’s no better feeling than getting your ingredients right from the source, and with this delicious recipe by Chef Alex Page, you can do just that. Bragg Farms offers a dig-your-own potatoes experience or you can pick up organic potatoes from their farm store. And, it wouldn’t be a fall recipe without fresh, locally-grown corn from Linton’s Farm Market.


Ingredients (serves four):

  • 30 mL (2 tbsp) olive oil
  • 450 g (3 cups) Bragg’s red-skinned potatoes, small diced
  • ½ yellow onion, diced
  • 2 cobs Linton’s corn, kernels removed
  • ¾ cup black beans, drained and rinsed
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper
  • Sour cream, for serving
  • Fresh cilantro, for serving

Instructions:

  1. Heat the olive oil in a large skillet over high heat. Add the potatoes and season generously with salt and pepper. Cook for 15 to 20 minutes, stirring frequently until the potatoes are tender, deeply golden and crispy.
  2. Add the onion, corn and black beans. Season with the smoked paprika and oregano, and add additional salt and pepper if needed. Reduce the heat to medium and cook for five to 10 minutes, stirring occasionally until the onion is tender, the corn is plump and lightly golden, and the flavours have all come together.
  3. Divide the hash among plates, and serve hot with a dollop of sour cream and fresh cilantro.

Serving suggestion: Top each portion with a fried egg for a heartier breakfast or add chopped crispy bacon to the hash.
