Page's Platefuls: Apple, Squash & Chipotle Soup Recipe

Using apples from Archibald Orchard & Estate Winery and other local ingredients, Chef Alex Page has created a delicious soup for you to try at home—the perfect comfort meal as we head into the cooler temperatures and embrace fall.

Apple, Squash & Chipotle Soup Recipe
Ingredients (serves four):
- 1 tbsp olive oil
- ½ yellow onion, thinly sliced
- 1 Archibald’s Apple (Ambrosia, Honeycrisp or Gala), cored and sliced
- 1 clove garlic, peeled
- 1 ½ cups, peeled and diced buttercup squash
- 1 chipotle pepper in adobo
- 2 tsp chili powder
- 1 tsp ground cumin
- 2 cups Archibald’s Fresh Apple Cider
- 2 cups vegetable broth
- Sour cream, hickory sticks, and fresh parsley for garnish
Instructions:
- Heat olive oil over medium-high heat in a medium-sized sauce pot. Add in onion, apple, garlic, squash, chipotle, chili powder and cumin. Cook, while stirring, for 3 to 5 minutes, or until onions and apples are beginning to soften and spices become fragrant.
- Add in cider and vegetable broth and bring to a gentle simmer. Simmer, uncovered, for 20 to 30 minutes, or until squash is cooked through.
- Using an immersion blender, blend until soup is completely smooth. Garnish with a drizzle of sour cream, some hickory sticks and fresh parsley. Serve immediately.
